Ingredients

  • 6 cups crispy rice cereal (use certified gluten-free if needed)
  • 1 (10 oz) bag marshmallows (vegan if needed; check labels)
  • 3 Tbsp coconut oil
  • 1 cup dairy-free chocolate chips
  • 1 Tbsp dairy-free, soy-free shortening (or extra coconut oil)
  • Green food coloring
  • Candy eyes (or see Notes for swaps)
  • Zip-top bag (for piping)
  • Parchment or wax paper

Kid Jobs vs. Grown-Up Jobs

Kids can: measure cereal, stir (off heat), add food coloring, press mixture in pan, place candy eyes, help pipe mouths.

Grown-ups handle: stovetop melting, microwave melting, cutting, chocolate dipping, and hot items.

Instructions

  1. Melt & Tint: In a large saucepan over medium-low, melt coconut oil. Add marshmallows and stir until smooth. Tint the mixture Franken-green with food coloring.
  2. Mix: Remove from heat. Stir in cereal until evenly coated.
  3. Press: Press into a greased 13×9-inch pan. Lightly wet or oil your hands to prevent sticking. Let cool.
  4. Chocolate Hair: In a microwave-safe bowl, melt chocolate chips with shortening in 30-second bursts, stirring between each, until smooth.
  5. Cut: Slice the cooled slab into 12 rectangles. Gently square the edges if needed.
  6. Dip: Dip the top of each rectangle into the melted chocolate for “hair.” Set on parchment to dry.
  7. Faces: Spoon remaining chocolate into a zip-top bag, snip a small corner, and pipe a straight line for a mouth.
  8. Eyes: Dab a little chocolate on the back of two candy eyes and press onto each square.
  9. Set & Serve: Let the chocolate harden (or chill briefly). Enjoy your little monsters!
