Eczema-Friendly Lunch Recipe: Quinoa and Veggie Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers (any color)
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup black beans (canned or cooked)
  • 1 cup corn kernels (canned, frozen, or fresh)
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers (any color)
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish (optional)

    Instructions:

    1. Preheat your oven to 375°F (190°C).
    2. Cut the tops off the bell peppers and remove the seeds and membranes.
    3. In a large saucepan, heat the olive oil over medium heat. Add the diced onions and peppers and sauté until they become tender.
    4. Stir in the quinoa, diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper. Cook for 2-3 minutes, allowing the flavors to meld.
    5. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat, cover, and let it simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
    6. Stuff each bell pepper with the quinoa and veggie mixture.
    7. Place the stuffed bell peppers in a baking dish, cover with foil, and bake for 25-30 minutes, or until the peppers are tender.
    8. Garnish with fresh cilantro and lime wedges before serving.
